Irish-ish Soda Bread

Bread flour: 350 gms
Oatmeal: 2 tbsp
Yogurt: 4 tbsp
Baking soda: 2 tsp
Dry oregano: 1 tbsp
Vinegar: 1 tsp
Warm water: 1 cup
Salt: 0.5 tsp
Vegetable oil: 1-2 tsp

WHAT YOU NEED: Large bowl, baking tray, oven

1. Sift the flour, salt and baking soda into a large bowl, and mix in the oatmeal and oregano.
2. Add the vinegar to the cup of warm water; stir and set aside.
3. Turn on the oven right about now.
4. Mix the yogurt in with the flour and dry ingredients in the bowl. Add the warm water-vinegar mixture little by little, and knead lightly and quickly, till the dough is smooth and soft.
5. Roll the dough into a ball, set it on the bread tray, oil the surface, and if you feel like giving it the traditional 'soda bread' look, cut a cross on top. Sprinkle some dough on top.
6. Stick it in the oven for 15 minutes, and then lower the temperature a bit. (I turn it off for a couple of minutes and then turn it back on.)
7. Check on your bread after another 20 minutes or so. If it sounds hollow when tapped, it is done.
8. Turn over on a rack and let it cool. Slice and serve warm with butter and/or tea--that's how the Irish do it.
