Apple Cardamom Bread

Apples: 4 medium, cored & peeled
Yogurt: 2 tbsp
Sugar: 1 cup
Butter: 4 tbsp, softened
Egg: 1
Essence of vanilla: 1 tsp
Powdered cardamom: a pinch (one pod)
Bread flour: 2 cups
Baking soda: 1.5 tsp
Salt: a pinch

WHAT YOU NEED: Blender, large bowl, whisk, bread tin(s), oven

1. Blend the apples and yogurt till smooth.
2. In a large bowl, whisk sugar and softened butter together. Add the egg, vanilla and cardamom, and beat till smooth.
3. Pour in the blended apples and yogurt, and mix gently.
4. Grease and flour the bread tin(s), and turn the oven on (i.e. 'preheat', though I hate that word and dispute its legitimacy).
5. Sift the flour, baking soda and salt. Pour into the bowl and mix with wet ingredients. The consistency will be somewhere in between that of bread dough and of cake batter.
6. Pour into bread tins, making sure it is no more than half-full (or no less than half-empty, depending on your outlook on life).
7. Toss into the oven, and keep your fingers crossed. Find something to do for the next hour or so. Check on your bread after 45 minutes. It is done when a toothpick inserted in the centre comes out clean.
8. Turn over on the rack and let it cool a bit. Slice and serve warm with butter.
